Abstract: Today the Belarusian food market, the trend of production and sales of specialized food products. However, it should be noted the problem of the ratio of the range of traditional foods and products for special purposes. In this article an approach to the formation of a range of specialty bakery products for the retail network, taking into account the characteristics of the product and development segment.
